01The Beginning

In 2020 the world stopped and Gabrielle started baking. It wasn't a plan. There was nothing else to do. She pulled out flour and butter and started making things from scratch — badly at first, then well, then better than most people who've been doing it for twenty years. Somewhere between the hundredth batch of cookies and the first cinnamon buns that came out exactly right, it stopped being a way to pass time and became the thing she was going to do.

02Why From Scratch

There's a reason store-bought dessert tastes like nothing. It was made months ago, in volume, by a machine, to survive a shelf. Gabrielle bakes the opposite way. Real butter. Real fruit. No pre-mix, no shortcuts, no filler. It's slower, it costs more, and it's the entire point.

03Why Made-To-Order

Nothing in this kitchen gets baked until someone orders it. That's why there's a lead time, and that's why it's worth waiting for. The goal isn't to sell you what's left over. It's to hand you something that came out of the oven for you, the day you needed it.
